[Make This] Stuffed Rice Balls (Arancini) with Minute Rice

Rice BallsI love food, but I’m terrible at making enough time to actually cook dinner. So, most of my meal come from fancy gourmet grocery stores, or I just eat out a lot. I have a lot of big things coming up this year, so I need to save some money! Making your own food is a great way to save money and to eat healthier.

Rice Balls

I decided to make their Mozzarella Stuffed Rice Balls because I’m basically obsessed with arancini, but have never made it before. They came out perfect and oh so good. Wanna make your own? Follow along below with my modified arancini recipie!

Ingredients

Instructions
  1. Cut up mozzarella.
  2. Measure out butter and grate Parmesan cheese.
  3. Prepare rice according to package directions. While still hot, stir in butter and Parmesan cheese; let cool completely. Ensure that the rice is completely cooled.
  4. Stir in eggs, 1/2 cup (125 mL) of the bread crumbs and parsley.
  5. Roll 1/4 cup (60 mL) of the rice mixture into a ball. Hollow out the centre to create a space for the filling; place one cube of mozzarella in centre of ball. Reshape the rice to enclose the filling. Repeat to make 18 rice balls; roll in remaining bread crumbs.
  6. In deep saucepan, pour enough oil to come about 4 inches (10 cm) up side of pan; heat to 350˚F. Fry rice balls, in batches, for 3 or 4 minutes or until golden brown.
  7. Transfer to paper towel–lined tray or plate.
  8. Top with your favourite tomato sauce, and enjoy!
