I’ve been trying to find a way to incorporate more veggies in my diet, and Martha Stewart’s newest collection of recipes is helping me do just that.  Meatless is a tasty collection of over 200 recipes that include everything but meat. Perfect for vegetarians, Meatless Monday, or just delicious side dishes.

I also love the little extras that are included in this book. There is a great section on “Versatile Vegetarian Pesto Variations” that I can’t wait to try this summer with veggies from my garden! Smoky Bell Pepper Pesto is clearly something my life needs more of!

Another awesome thing is the appendix that is full of basic recipes (vegetable stock) and basic tips for new cooks (how to blanch and peel tomatoes)
