[Make it!] Madeleines from Maman

IMG_0280I love Madelines, don’t you? Here, the chef from Maman shares his recipes for perfect Madelines!
Ingredients
3.5 oz of Flour
0.11 oz of Baking Powder
3.5 oz of Butter
¼ of Lemon Zest
2 Eggs
4.3 oz of Sugar
1 tbsp of Thyme Leaves

Preparation
○ Preheat oven to 425°F
○ Sift the flour with the baking powder and mix with a wooden spatula
○ Melt the butter in a pan and let it cool down
○ Chop the zest of the lemon
○ Break the eggs in a bowl and pour in the sugar. Whisk for 5 minutes until combined and bubbly
○ Add in the flour and baking powder, butter, chopped zest and thyme
○ Butter the Madeleine pan and add the dough to 2/3of the madeleine pan
○ Bake at 425°F for 5 minutes and reduce the heat to 390°F and bake for another 10 minutes
○ Unmold the madeleine when it is at room temperature and let it sit to cool down
