I love to eat, but am usually pretty busy so don’t have time to cook. Minute Rice knows that it can be hard to cook when you get home from work, or after a busy day. Ceri Marsh and Laura Keogh, from Sweet Potato Chronicles, taught us how to create some super simple dishes using Minute Rice!
Together, we cooked a simple Fish Taco Bowl with jasmine rice. It was ready in a flash, and was a delicious meal.
My favourite dish that we made was the Pomegranate, Orange and Feta Wild Rice Salad. When I think of salads, rice is the last thing that I think of. This dish changed that! Using long grain wild rice and feta cheese, we whipped up this salad quite quickly. I loved eating it, and the best part is that it makes large portions so that you can eat it during the week. You’ll need:
1 tsp (15 mL) |
orange zest
|
|
1/4 cup (60 mL) |
orange juice
|
|
2 tbsp (30 mL) |
olive oil
|
|
2 tbsp (30 mL) |
red wine vinegar
|
|
1/4 tsp (1 mL) |
each salt and pepper
|
|
1 |
bunch watercress, trimmed
|
|
1 |
orange, segmented and chopped
|
|
1/3 cup (75 mL) |
pomegranate seeds
|
|
1/4 cup (60 mL) |
crumbled feta cheese
|
Then you:
Step 1: Prepare rice according to package directions. Let cool completely.
Step 2: Whisk together orange zest and juice, oil, vinegar, salt and pepper.
Step 3: Toss rice with orange vinaigrette. Stir in watercress, chopped orange segments andpomegranate seeds. Top with feta cheese.
